Watermelon Mint Margarita – Champagne and Coconuts

Watermelon Mint Margaritas served in a carved watermelon are sure to be a hit at your summer get togethers. Made with delicious, fresh watermelon,
- 2 cups Watermelon fresh
- 1/2 cup Tequila
- 2 oz Triple Sec or Cointreau
- 2 cups Ice
- 4 sprigs Mint divided
How to Hollow out a Watermelon for your Drink
- With your knife, make a slice on the bottom to make a flat surface so the watermelon can stand upright for your drink. (You may be able to skip this step if your watermelon already has a flat side and can stand up straight without rolling.)
- Then make a slice on the opposite side to remove the top.
- With your knife, make vertical slices in the shape of a plus sign and then all around the edges.
- Using your ice cream scoop, scoop out as much watermelon as you can and put it in a bowl.
- Using your scoop, carefully remove additional watermelon from the rind, leaving the rind so that you can see the white part of the melon.
How to Make a Watermelon Mint Margarita
- After hollowing out your melon, place your watermelon, tequila, triple sec, ice, and the leaves from 2 mint sprigs into your blender. Pulse until blended.
- Pour into your watermelon rind and / or a pitcher.
